Vegan zucchini cake with whipped coconut frosting
On Monday our little taco turned uno. We celebrated over the weekend with a backyard Mexican fiesta. My friend Nicole made the cakes, a healthy-ish zucchini for Max and a decadent tres leches for the rest of us (find her on Facebook at Belle Torte Cakes). The local Mexican restaurant delivered the food and we kept the whole thing simple yet festive.
A year of Max
Sometimes it’s the simple things in life that bring so much pleasure. Today I’m thankful for popsicles. Recently I discovered that my favorite little popsicle shop four hours away in St. Augustine is now exporting to Dunedin. I can walk a mere 15 minutes for a fresh, juicy artisan ice pop. For those in the area, there is a case of amazing selections like pineapple cilantro and sangria plum waiting for you at Broodway Deli. I’m thankful to have Hyppo in my neighborhood!
What are you thankful for today?
I’m loving our rental condo…I found this purple mat in the closet last night. M took Baby Max with him on an errand this morning and I got 45 minutes of delicious quiet time outside in the courtyard. I chose a slow flow sans music since there’s already a soothing waterfall for background noise. What a great way to start the day!
What’s making you smile today?
Today I’m celebrating my first mother’s day… M surprised me with a Thai food festival at a Buddhist temple. Yummy!

Max and I are spending the month of May in Florida with our family and friends while M travels back and forth for work. Baby Max doesn’t really like to sit still so we’ve been on lots of walks around town and along the Gulf. We’re enjoying fresh air and the relaxed pace of life that is the South.

Friday night free concert series at John Weaver Park
Recently I stumbled upon this little gem in Dunedin, Florida. Serendipity Cafe serves fresh, healthy (and gluten-free) breakfast all day long. I ordered a fruity spinach smoothie with cornmeal pancakes, almonds & blueberry syrup. It was delicious and I felt full, yet light and happy after devouring it all. The restaurant is connected to a health food store~ add the yoga studio down the street and what more could you ask for?
