Brown rice, black beans, sautéed mushrooms, roasted carrots, Daiya cheese, cilantro, avocado & lime
Tuesday night’s dinner was another version of last month’s burrito bowl: filled with yummy cheesy bean deliciousness. Here’s how I layered this one (from the bottom up):
- cooked brown rice
- crockpot black beans~2 cups beans, six cups water, one chopped onion, cook low 8 hours *Bonus: last hour throw in a piece of kombu to prevent gassiness from beans
- a sprinkle of cumin, cayenne & garlic powder
- roasted carrots
- sautéed mushrooms
- Daiya cheese
Microwave 3 minutes until cheese is melted. Mash up 1/4 avocado with lime juice and salt. Sprinkle with fresh cilantro.
