Ooey gooey mac’n’cheese
Did you know that cashews could be blended up to make a protein rich “cheese” sauce that tastes great? I used this recipe a week ago to make cheesy grits and there was plenty of leftover sauce for last night’s mac’n’cheese. It’s even M approved (M is my hungry boyfriend who doesn’t like anything that tastes “healthy”). I heated up whole wheat pasta and the cheese sauce together in a saute pan, sprinkling some Daiya cheddar in the mix, although don’t worry if you don’t have any Daiya, it would be delicious without.
It was the kinda night where the fridge needed to be cleared out so I made salad and cauliflower steaks. Cauliflower steaks are so simple, but they make your plate look special. Basically you just cut the cauliflower into thick slices and roast it the way you normally would. I can’t wait to try this cauliflower steak sandwich recipe.
