I’m in love with miso in the morning. It’s a fresh and healthy start for any day, but it’s especially great for the morning after a splurge (like popcorn for dinner while catching up on Desperate Housewives and Gossip Girl). I wrote about a miso soup a few weeks ago with links to why it’s so great for you. Here’s the basic recipe I start with, but I’ve been adding more lately and it just gets yummier with each new thing.
My Favorite Morning Miso
- 4 cups homemade veggie broth (store bought or water works too)
- 1 Tbsp. shredded nori
- handful of shiitake mushrooms, sliced
- 2-3 radishes, sliced thinly
- 1 or more green onions, chopped
- handful of sweet pea leaves
- 1/4 cup white miso paste
Directions: Bring broth and nori to a simmer. Cook for at least five minutes (this is a good time to chop the veggies). Add mushroom slices and green onion to the pot. Simmer until mushrooms soften. Scoop out about half a cup of the broth and mix it with the miso in your soup bowl. Stir well. Bring the heat to low for the soup. Put the miso broth mixture in the pot with the radish slices and sweet pea leaves. Let the leaves wilt and then turn the heat off. Enjoy a yummy breakfast and save the rest for another day.
