Quinoa Avocado Salad

Oh how I love avocado! It’s rich, creamy and delicious; plus avocado is known for it’s beautifying properties. Avocados are chock full of the healthy fat that gives skin and hair a radiant glow. And to think I was scared of them until I was 20. Quinoa is another super-food all-star that’s relatively new to me. This recipe from Kripalu combines the two for a yummy, summery fresh salad.


  • 1 cup quinoa
  • 1/2 red pepper, diced
  • 2 scallions, sliced
  • 1/4 cup roasted pumpkin seeds
  • 1/4 cup olive oil
  • 3 Tbsp. lemon or lime juice
  • 1 tsp. sea salt
  • 1 fresh ripe avocado, chopped into bite-sized pieces
  • 1 can black beans, rinsed and drained


Cook quinoa according to package directions. Allow ten minutes to cool. Place all ingredients in a large bowl and mix well.

*We put this salad over a bed of greens with sliced radishes on the side, but it could also be eaten plain or even stuffed in a burrito. Yum!
