Our First Supper

We’ve officially gotten the approval to move into our new house. Half the furniture is here and most things are still in boxes, but I really wanted to eat at home for my first sleepover so I threw this mix together last minute.

Kale, White Beans & Fennel

Serves 2 with leftovers

Ingredients:

  • one small fennel bulb, sliced into half moons (save the green parts for another use…like veggie broth)
  • one can white beans, drained and rinsed
  • 2 cups chopped kale
  • one shallot, diced
  • 2 large garlic cloves, minced
  • salt and pepper

Directions:

Heat two tablespoons of water in a saute pan over medium heat. Cook fennel for about ten minutes, stirring and adding water as needed so that it stays moist and starts to soften. Add shallots and garlic. Cook another five minutes, adding water as needed. Toss the white beans in the pan and stir. Use the back of the spoon to mash some of the beans, making the mixture slightly creamy. Put the kale in the pan and top with a lid for about two minutes, until kale becomes bright green. Mix everything together and sprinkle it with salt and pepper.

Enjoy an easy low-fat meal full of protein and green nutrients!
