Another Packed Lunch

Yesterday was another yoga-packed day with a delicious homemade lunch prepared by my good friend and fellow yogini Wania (pronounced Vaun-ya, she’s German).

Couscous with mushrooms, broccoli, roasted red & yellow peppers, carrots, garlic and a spicy little kick.

The warm weather has me craving salads again (no soup on 70-degree days!!), so today it was mixed greens, carrots, broccoli slaw, craisins, sesame sticks, avocado, Quorn “chikn” tenders, and smashed up snap pea crisps. I use very ripe avocado in my salad because I love the way–when I toss everything together–the avocado smears all over everything and coats the rest of the salad like dressing.
