Crazy @ Curry

The winter chill outside made tonight’s steaming bowl of butternut squash soup that much tastier, recipe courtesy of Gwyneth Paltrow (you can find it here). I used roasted chickpeas as a nutritious version of croutons, adding protein and a fun little crunch.

The end

The green stuff is spinach. M has an aversion to pureed soups a.k.a. baby food in his eyes. I put some chopped spinach in his to give it texture and he was happy. I’m usually a fan of all things green, but I kept mine pure and simple this time.
