Yesterday I ate a lot of processed food, so today my body was telling me to start the day with some nutrient rich leafy greens. I decided to attempt sunny side up eggs even though they didn’t turn out so great last time. Recently I came across a simple recipe for fried eggs and greens in Mariel Hemingway’s Healthy Living from the Inside Out.

Breakfast in under 10 minutes
Fried Eggs and Greens (Serves 1)
- 1-2 eggs
- 2 cups spinach
- butter or olive oil
- salt and pepper
Heat a little butter or oil in a pan over medium heat. Throw in 2 cups washed spinach. Place the lid on the pan and allow the spinach to wilt for about one minute. Transfer to a plate and cover with an extra lid. Heat another dab of butter or oil in the pan. Crack the egg(s) in the pan. Let them sizzle for around the edges until they’re golden brown. Put a lid over the pan and cook for 1-2 minutes, depending how runny you would like the yolk. Lift the eggs out with a spatula and place on the greens. Top with a sprinkle of salt and pepper and serve with fresh fruit.
